The Vegan Pastry Academy is the frontier of online vegan pastry education where we strive to redefine the perception of vegan and gluten free pastries.
Traditional pastry training has relied for too long on animal-based ingredients,
leaving a significant gap in vegan pastry education to meet the rising global demand for plant-based needs.
My path here didn't start with veganism — it started with classical training.
I'm a graduate of Le Cordon Bleu, and for over 23 years I've worked as a professional chef and pastry chef across four countries: Italy, the United Kingdom, the Middle East, and the United States.
That international foundation matters more than it might seem.
In Italy, I learned the discipline and precision that only comes from training in the birthplace of so much of what we consider "classic" pastry. In the UK, I refined technique inside some of the industry's most demanding kitchens. In the Middle East, I learned to adapt ingredients and flavor profiles for entirely different palates, climates, and expectations. And here in the United States, I've spent years building a plant-based practice that never once asks anyone to accept "good for vegan" as good enough.
When I transitioned to a vegan lifestyle myself, I didn't set my culinary training aside — I went back to school. I pursued a second, formal education specifically in plant-based culinary technique, because I refused to treat vegan pastry as a simplified version of the real thing. It isn't. It's its own discipline, with its own chemistry, and it deserves to be taught with the same rigor as any classical program.
This is exactly what sets The Vegan Pastry Academy apart.
Most vegan baking education today comes from passionate home bakers and self-taught creators — and their enthusiasm is real, and has moved this industry forward in genuine ways. But there's a difference between learning substitutions through trial and error, and understanding the actual chemistry behind why a technique works in the first place. I bring both: the classical foundation of a Le Cordon Bleu education, refined across four countries of professional kitchens, and the specialized, formal training that makes plant-based pastry not just possible, but exceptional.
